It's my friend Grace's birthday, so I designed her a cake with the assistance of Winnie.
I think making presents means so much more and the best. And it saves the hassle of finding a present!

Berry Charlotte (adapted from tartelette)
Coconut lady fingers:
- 1/2 cup cake flour
- 3 large eggyolks
- 1/2 cup sugar, divided
- pinch salt
- grated coconut
Compote des baies:
- 800g mixes berries
- 4-5 tbsp casting sugar
- 1/2 cup water
- 1/2 cup cranberry juice
- 2 tsp gelatin powder
- 250ml milk
- 1/4 cup sugar
- 3 egg yolks
- 2 sp chambord
- 2 tsp powdered gelatin with 1/4 cold water
- 1 1/2 cups raspberries mashed with fork
- 3/4 heavy cream
- 1 cup heavy whipping cream
- 1/2 tsp vanilla extract
- 1 tbsp granulated white sugar

it was very yummy! me trace and jenny had to fight over alvin's piece :p
took about 2 hours but got to let the mousse set over 24 hrs I reckon for it to be very firm. But it went alright for 16~ hours.
Thanks Indi! I was scared it wasn't going to turn out good since it was my first time trying a mousse cake.
Helmet can get really crazy here as the weather is so humid and hot lol
